This Hungarian dish brings the warm flavours of paprika & cayenne pepper and is packed full with seven different types of vegetable.
According to recent research an ideal diet is made up of seven portions of fruit and veg a day – two more than current UK government guidelines. This research suggests that adding this extra nutrition cuts down the likelihood of dying from cancer or heart disease. Vegetarian diets have frequently been linked to lower incidences of these sorts of illness and that could be due to the consumption of higher amounts of vegetables.
Even in a vegetable-rich vegetarian or vegan diet, it is always possible to pack in that bit more and today’s recipe is an ideal go-to when you really want to fill up on a variety of vegetables. The beans in this dish bring added protein, whilst the lentils provide extra fibre and heart-loving magnesium. Well, if that wasn’t enough there’s even a touch of marmite to add all-important B-vitamins. All of the ingredients in this dish are simply added to the slow cooker together negating the need for any added oil.
Ingredients:
2 medium-sized sweet potatoes cut into 1 inch chunks
250g red lentils
2 red onions, each cut into 16
1 can kidney beans, drained
1 can butter beans, drained
1 can black eyed beans, drained
2 cans/800g chopped tomatoes
150ml veg stock
1tsp marmite
4 cloves garlic
2tbsp Hungarian paprika
2tsp cayenne pepper
Plenty of black pepper
- Add all of the ingredients to the slow cooker. Mix well. Cook for five hours on high or ten hours on low.
- Serve with an extra sprinkling of black pepper and crusty bread or rice.

This looks delicious! What is marmite? I have never heard of that before!
It’s a thick dark paste made from yeast extract. I don’t think it’s actually available in the States except in somewhere quite specialist… The taste is very strong if you have it on its own (like on toast, yum!) so it’s known as a ‘love it or hate it’ food ;)
I have an old crock pot from the 1970s that was given to my mom as a gift from her mother. My mom never used it, but I use it all the time. (I’ve even baked bread in it.) I’ll be adding this recipe to my crockpot culinary repertoire. Thanks!
That’s brilliant – I got mine as a gift only last Christmas. It’s already become the most important thing in my kitchen! Would love to try cooking bread in it.

I actually used the crock in my oven itself – covered with a stoneware plate as the lid. Makes the most amazing bread. I have a recipe if you’re interested.
I’ll make the dish sometime soon – perhaps not with the marmite though, I know what it is, but have never tasted it.

It would work just as well without Marmite but I find it adds an extra depth of flavour that really suits this dish.

What amazing flavours! I was wondering the purpose of marmite when I saw it that day in the supermarket.. I might have to try your recipe to use it! :)
Marmite is more traditionally used on its own spread over toast or crackers but I love the deepness of flavour it adds to a dish like this. Let me know how it goes it you do try it out :)

I think seven different veg sounds like an awful lot until you get started, but with things like tomatoes, onions and lentils to fill in the gaps you have seven before you know it :)

It would be helpful to know how many servings this dish makes. Maybe I overlooked it though. Can you fill me in on that, please.
Hi John, sorry I should have specified. My slow cooker recipes serve around 6-8 as per a slow cooker-full. You usually get enough for a meal and extras to freeze. Hope that helps!
