Coconut Water Mojito Mocktails

Light and refreshing, this mocktail mojito is a healthy drink for any evening or the morning after! The recipe makes one 250ml serving.
  • ½ lime, cut into three wedges
  • 2 springs fresh mint
  • ½tsp unrefined sugar
  • 2 cubes ice
  • 100ml coconut water
  • 100ml sparkling water
  1. Add the lime wedges into the glass, squeezing as you do. Slap the mint leaves on the back of your hand a few times and add them to the glass too. Add in the sugar and "muddle" using a narrow rolling pin or the end of a wooden spoon (or something along these lines!).
  2. Add the ice, coconut water and sparkling water to the glass. Stir gently to mix and serve.
